Kodiak Lemon Poppyseed Protein Muffins

191 cal, 36.8 carbs, 1.8g fat, 7.8g protein
2 c. Kodiak mix
3 tsp. Baking powder
1/2 c. brown sugar
1/2 c. 0% greek yogurt (I used Siggs)
1/2 c. Unsweetened applesauce
1 c. Skim milk
1 T. Flax meal
3 T. Water
2 tsp. Lemon extract
Zest of 1 lemon
3/4 T. Poppy seeds


Glaze: powdered sugar, skim milk and a small amount of additional lemon extract.


Bake at 350 until slightly browned around the edges.
