Pizza Stuffed Zucchini

Ingredients:

10 oz. 93% lean ground beef
1/4 c. chopped onion
1/2 of a green bell pepper, chopped
1 large garlic clove, minced
4 medium zucchini
1 jar tomato basil pasta sauce
3/4 c. mozzarella, shredded
pickled jalapenos
7 slices pepperoni, chopped

Brown ground beef with bell peppers and onions until cooked through. Add in garlic and cook for 1-2 additional minutes. Meanwhile, cut the zucchini in half and scoop out about half of the zucchini from inside the skin on each side (A cookie scoop works well for this). Place the zucchini in a square dish with about 1/2" of water. Cook the zucchini for 3-4 minutes in the microwave until soft. Remove and line them in a 9 x 13 pan. Top each half with pasta sauce, then ground beef mixture, cheese, pepperoni and jalapenos. Bake at 375 for 10-15 minutes until cheese is melted. Serve with additional pasta sauce.

*Save the extra zucchini to make zucchini bread.
