Taco Chicken Burgers


Taco Chicken Burgers

It is the day before grocery day and this recipe came about by using up odds and ends. You know the day when you have 1/2 of a brown apple, three broccoli stalks, 1 slice of bread, and two eggs? That day.

Ingredients:

12 oz. package of 98% fat free ground chicken
1 tsp. chili powder
1 tsp. cumin
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. paprika
1/2 tsp. beef broth base (I use Orrington Farms brand)
salt & pepper to taste
Sliced sweet potatoes, skin on
olive oil
seasoned salt
sliced cheese
lettuce, avocado etc. 

Preheat the oven to 400. Place the sliced sweet potatoes on a baking pan coated with olive oil spray and spray the tops of the sweet potatoes as well. Roast in the oven for 15-20 minutes until soft and slightly browned. 

Meanwhile, combine ground chicken with spices in a bowl. Form into 5 patties. Drizzle a skillet with 1 tsp. olive oil and brown the patties on each side until cooked through. 

Use two sweet potato slices as your bun. Stack them up however you like. We added Colby jack slices, lettuce, and avocado.
