Oatmeal Avocado Chocolate Chip Pancakes


127 calories, 5.5g fat, 3.9g protein

Servings- 14 pancakes

Ingredients:

1 c. oats
1 c. white wheat flour
2 T. cocoa powder
1/4 c. brown sugar
1 2/3 c. skim milk
2 small avocados, pureed
1/4 c. semi sweet chocolate chips
1 tsp. salt
1/2 tsp. baking soda
3 tsp. baking powder
1/4 c. plus 3 T. water
1 T. lemon juice

Combine all ingredients except chocolate chips and mix well. I top each pancake with 5 or 6 chocolate chips as I am cooking them.

*Cook these pancakes on a lower temp than regular pancakes and cook them longer. They will be soft, but firm up once slightly cooled.
