Whole Wheat Turkey Lasagna Soup

Ingredients:
16 oz. lean ground turkey
1 T. olive oil
2 cloves garlic
1/4 chopped onion
2 tsp. beef broth base ( I use Orrington Farms brand)
1 26 oz. jar of tomato basil pasta sauce
8 whole wheat lasagna noodles
2 c. water
2 c. fat free cottage cheese
6 tsp. parmesan cheese, grated

Brown ground turkey in olive oil with onions and garlic. Add in beef broth base and cook 2 minutes. Add in 26 oz jar of pasta sauce and 2 c. of water. Break apart pasta noodles into 4 piece squares and add to soup mixture. Stir. Cook according to package directions, stirring occasionally. Serve hot and add in 1/4 c. cottage into each bowl. Stir slightly to combine and top with 1 tsp. parmesan cheese.
