Baked Cherry Oatmeal Muffins

You can't let leftover fresh cherries go to waste. You just can't. So you turn them into a quick lowfat breakfast.

Ingredients:
1 & 1/2 c. oats
1/2 c. unbleached flour
1 tsp. cinnamon
2 T. flax meal
6 T. water
3/4 t. salt
3 t. baking powder
1/2 c. brown sugar
1/4 c. skim milk
1/2 c. unsweetened applesauce
1/2 c. nonfat vanilla Greek yogurt
1 c. fresh cherries, chopped


Mix everything together except cherries. Mix well. Fold in chopped cherries. Bake at 350 for 20 minutes.
