Italian Protein Frittata

Ingredients:
2 eggs and 2 egg whites
1/2 c. fat free cottage cheese
salt and pepper
1/4 c. chopped spinach
3 cherry tomatoes, diced
1 T. red onion, diced
Bertolli pasta sauce
olive oil


Place 2 medium eggs and 2 egg whites with 1/2 c. fat free cottage cheese, salt and pepper in your blender and pulse until cottage cheese is smooth.

Pour into a preheated cast iron skillet with 1/2 tsp. oil.

Add in 1/4 c. chopped spinach, 3 chopped cherry tomatoes and 1 T. chopped red onion.

Cook for a few minutes on the stove then transfer to the oven and bake at 275 until eggs are set.
Top with 2 T. of Bertolli organic olive oil, basil and garlic pasta sauce.
