Egg free lowfat french toast pancakes
I woke up craving French toast this morning and was out of my regular bread. I solved that problem by coming up with a quick recipe for French toast pancakes. Enjoy!
Egg free lowfat French toast pancakes
135 calories, 3.8g fat, 4g protein
Dry ingredients:
1 c. oats
1 c. unbleached flour
3 tsp. baking powder
1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 T. brown sugar
Wet ingredients:
1 T. lemon juice
1 T. olive oil
1 c. skim milk
6 T. water
2 T. flaxseed meal
1 tsp. vanilla extra
1/2 c. pumpkin puree (not pumpkin pie mix!)
Blend the dry ingredients and wet ingredients in two separate bowls, then combine everything in one bowl. Whisk everything together. Let sit for 5-10 minutes so that the oats can soften. Using a 1/3 c. measuring cup pour into greased pan. (I grease mine with coconut oil or spray). Cook until slightly brown. This recipes makes 9 good sized pancakes.
