Balsamic and Honey Chicken Kabobs and a Side or Cheesy Orzo with Broccoli

    Kabobs and Orzo side- 372 calories, 6.5g fat, 33g protein

Balsamic and Honey Chicken Kabobs

Ingredients:
2 chicken breasts cut into large cubes
1 green bell pepper cut into large pieces
1 onion cut into large pieces

Marinade:
1 tsp. balsamic vinegar
2 T. honey
2 cloves garlic, minced
1 tsp. olive oil
1/2 tsp. lemon juice
1/4 tsp. dried parsley
salt and pepper
8 wooden skewers

Mix all ingredients and toss chicken in the marinade. Refrigerate for 2 hours. Once ready assemble kabobs with bell pepper, onion and chicken pieces. Pour remaining marinade over top of the kabobs. Broil in the oven about 7 minutes per side.



Cheesy Orzo with Broccoli

Ingredients:
1 c. orzo, uncooked
2 c. water
2 tsp. chicken broth base, ( I use Orrington Farms brand)
1 c. of broccoli, chopped small
salt, pepper
2 T. parmesan, grated
1/2 c. fat free cottage cheese
1/2 c. mild cheddar cheese grated

In a pot mix orzo, water, broth base and salt and pepper. Boil for 8-10 minutes until orzo is cooked through. Meanwhile steam your broccoli in the microwave with a little water. Once orzo is cooked add in cottage cheese, cheddar, parmesan and stir until cheeses are melted. Add in cooked broccoli. Add additional salt and pepper if needed. Serve warm.
