Spicy Mongolian Chicken

Serves 4
Ingredients:
2 chicken breasts, sliced thin or cubed
1 T. cornstarch
2 tsp. olive oil
3 c. broccoli
Sauce ingredients:
3 cloves garlic, minced
1 T. unbleached cane sugar
1/4 c. lite soy sauce (Lower sodium)
1 T. molasses
1 green onion, chopped
1 T. chardonnay
1 T. honey
1 T. ketchup
1 tsp. sriracha
1/4 tsp. sesame oil
1 tsp. rice wine vinegar
Additional 1 T. cornstarch mixed with 2 T. water
Heat olive oil in a wok at 350 degrees or use a skillet. Mix chicken with 1 T. cornstarch, salt and pepper and brown, cooking about half way through. Add in broccoli and all sauce ingredients, except remaining cornstarch and water. Cook for an additional 10 minutes or so until broccoli is tender. Mix remaining 1 T. of cornstarch with cold water in a bowl. Pour into chicken mixture and cook 2 more minutes. Served with white rice. Rice was calculated into macros.
*This would be really good in lettuce wraps for those who are low carb.
